Grilled Pizza

Pizza cooked on the grill adds and extra crispness to the thin crust. These are great when we have extra tortillas or flatbread in the freezer.


Grilled Pizza

4 tortillas or flatbread

Pizza Sauce

Bar-B-Q Sauce

2 cups Veggies of you choice*

Link2 cups Cheese
Foil



Heat grill to med-low. Mix a small amount of Bar-B-Q Sauce into the pizza sauce. I use about 2 tbs bar-b-ques sauce for every 1/2 cup pizza sauce. Spread the sauce mix on the tortillas. Sprinkle the pizzas with grated cheese and veggies. Place tortillas on a large sheet of foil and grill for about 5 minutes until the crust is crisp and the cheese is melted.


If using frozen veggies place them right on top of the cheese in the pizza. If using fresh veggies it is best to soften them first by grilling them or sauteing them for 2- min depending on the veggie.

Cheese Pizza

We love pizza around here. As my son says our favorite pizza has "red sauce and cheese on top." What he does not know is there are a few things I slip into the pizza besides sauce and cheese.


Cheese Pizza

1 cup grated Mozzarella Cheese

1 cup grated Chedder Cheese

1/2 cup grated Parmasean Cheese

1 cup Veggies of your choice (some of our favorites include spinach, carrots, zucchini, eggplant, squash, broccoli)

Pizza Sauce

Pizza Crust


Roll out pizza crust to fit pizza stone. Brush the entire crust with a small amount of olive oil. Chop veggies into tiny pieces. Defrost pizza sauce and mix with veggies. Spread sauce mixture evenly over crust. Layer cheeses over pizza, our favorite is to start with mozzarella and the chedder, ending with parmesean on top. Bake at 350° for 25 min.

Pizza Salad

Pizza is always enjoyed by kids. With this pizza you know they are getting a good amount of veggies. I will chop the veggies very fine so they are so mixed in the cheese that the kids hardly know anything else is on it.

Pizza Salad
1 recipe Pizza Crust

Sauce
1/3 cup Mayonnaise
1 clove Garlic crushed
1 ½ tsp Ranch Mix

Suggested veggies for toppings. Use whatever veggies you enjoy on your salads.
1 cup fresh Spinach
2 cups Cheese
1 Carrot
¼ cup Broccoli
1 Bell Pepper
1/2 Tomato
1 celery stalk
1 Squash or Zucchini
1 Cucumber


Shape pizza crust to desired size and thickness. Sprinkle a little corn meal on the baking stone and then place the dough over the corn meal. Brush pizza crust with olive oil.

Make sauce by mixing the mayonnaise, garlic, and ranch mix.
Chop up veggies and grate the cheese.
Spread sauce on crust. Lay spinach leaves in a single layer over the sauce. Sprinkle cheese over the spinach then spread the rest of the veggies over the cheese.
Bake at 350° for 15-20 min.

Pizza Crust

I always make my Pizza Crust while the kids are napping, then it is super easy to put the topping on and throw it in the oven for dinner.


Pizza Crust

2 tablespoons + 1 Teaspoon Olive Oil

½ cup warm water about 80°

1 cup All-purpose Flour

2/3 cup Wheat Flour

½ teaspoon Salt

2 ¼ teaspoons or 1 package active dry Yeast


Bread Maker- Place ingredients in as listed, wet ingredients first and then dry ingredients. Set to Pizza Dough setting.

By Hand- Mix the flour, yeast, and salt. Make a well and add the oil and water. Work in the flour to make soft dough.

Knead the dough on a lightly floured surface for 10 minutes or until the dough is smooth and elastic. Rub a little olive oil on the dough and place in a bowl covered with a towel. Let rise for 1 hour until double in size.

Use or freeze.

To use- Pull and stretch or roll dough to desired thickness. If time allow cover the dough to sit and rise again for 30-40 min. Brush with a little olive oil and place toppings on top.


Bake at 350° for 15-20 min.

Pizza Sauce

Make and freeze for quick pizza making.

Pizza Sauce
2 cloves Garlic
¼ small Onion
½ teaspoon Rosemary
½ teaspoon Thyme
¼ teaspoon Oregano
¼ teaspoon Basil
¼ teaspoon Marjoram
1 ¾ cup Diced Tomatoes
½ table spoon Olive Oil
1 tablespoon Honey

Cook onion and garlic in olive oil till soft. Add tomatoes, herbs, and honey. Bring to a boil then reduce heat and simmer for 30 minutes, stir occasionally. Let cool slightly and place in blender. Blend until smooth.
Depending on the extra veggies I have on hand I usually add 1 cup of extra veggies in with the onion. Spinach, carrots, and zucchini all work well. Just finely chop add with the onion to saute and soften they will not be noticeable once the sauce is pureed.

Makes about 1 cup sauce, enough for two pizzas.
